Mexican or America's version of Mexican is one of our favorite types of dinner. Tacos are great but they do get boring after awhile. This easy Mexican casserole dish is great for not only a variation to tacos but for messy eaters such as myself. This is not my creation. I found this recipe online years ago on Key Ingredient.

What I love the most about the Mexican Casserole recipe is that its budget-friendly to make, and as I mentioned it can be adapted for your own tastes. If you like it spicier, add spice. Cheese is its own food group in our house, so we always add more cheese than a recipe calls for.

Easy Mexican Casserole Recipe

Ingredients:

  • 1 pound lean ground beef
  • 1 10-12 ounce bag tortilla chips, crushed
  • 1 can ranch style beans
  • 1 can Ro-tel tomatoes
  • 1 small onion, chopped
  • 2 cups shredded cheddar cheese, divided
  • 1 package taco seasoning
  • 1 can cream of chicken soup
  • 1/2 cup water
  • sour cream and salsa for serving

Preheat oven to 325 degrees. In a large skillet, brown meat and drain off fat. Stir in beans, tomatoes, onion, taco seasoning, soup, and water. Simmer over medium-low heat until everything is well combined and heated through.

Grease a 9×13 casserole dish. Put down a layer of crushed tortilla chips, followed by a layer of the meat/bean mixture, then half of the cheddar cheese. Repeat layers.

Cover with foil and bake for 20-30 minutes, or until bubbly.

Let sit for 5-10 minutes before serving. Top with sour cream and salsa.

Look at that cheesy goodness! My husband doesn't like sour cream or salsa. I happen to like both so I add them to my individual portions.

In our area, it's hard to find Ranch style beans. Sometimes I add rice instead, or nothing at all. This particular time we added some canned chili we happened to of had on hand. My husband is your classic “meat and potato” guy and wanted more meat than the recipe called for.

This recipe is so easy and quick to make that the whole family can help, or it's a great go to when you are busy and short on time. My husband even helped me to create this meal. Usually, we cook separately due to a very small kitchen. It was nice to spend time together creating a delicious meal though.
